Im having trouble using the SNMP driver in NUT and the documentation isn’t very helpful has anyone been able to get around it as to how I would install and use this driver?

as mentioned in the other threads. Have you come across this tutorial:
UPS Monitoring with NUT + Net-SNMP (this one is using CentOS as its base, but I assume, aside from the installation steps using zypper and some other minor CentOS details, it should be applicable to an OpenSuse based system like Rockstor.

Maybe that can help resolve your challenges, if nobody on the forum can provide further assistance. If you do resolve it, it would of course be great if you could document it for posterity.
